General Comments:
Coolers were below 4 degC
Both chest freezers were below -18 degC
Rice in the warmer was at 65 degC
Kitchen handsink and washroom hand sink were fully equipped.
200ppm Chlorine is available in a spray bottle for sanitizing food contact surfaces.
Dishwasher rinse was 71 degC at plate level
Sushi rice pH was around 4.5. ADD MORE VINEGAR TO REDUCE PH TO AT OR BELOW 4.2 IF YOU'D LIKE TO STORE SUSHI RICE AT ROOM TEMPERATURE FOR MORE THAN 2 HOURS.
Operator has FS Level 1 certification (Expiry May 30, 2028).
