304 - Premises not free of pests [s. 26(a)] Observation: Rodent droppings are visible behind the stainless steel table of the chocolate area near the cotton candy area (next to electrical). Rodent droppings visible near: -posts -wall corners of various areas in the facility -under popcorn storage in the back dry storage area -under 3-comp sink -staff washroom -edge of room behind door of manager's office. Between guest chair and manager's desk. -between rack and hand wash sink at entrance, on rack and in corner behind rack. Corrective Action(s): Violation Score: 15 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)] Observation: Back entrance open during the inspection, not actively loading or watched. Laundry area wet and soiled cloths - flies still present. Sticky traps have been placed around the boarders. No box traps for rodents or light traps for flies. Cotton candy area still has some open cardboard containers of sugar. Piled up large bags of popcorn has some puncture marks that could be rodent bite marks. Spilled popcorn in this area needs to be cleaned up tonight. Water in bucket under drain of worker's washroom can attract rodents (feces around this bucket appear both old and new). Corrective Action(s): Keep entrances closed unless actively loading. Remove laundry daily and clean/sanitize area to prevent flies from breeding. Call a pest control contractor to install appropriate traps. Remove standing water. Wipe down wet areas in washroom, cleaning room (3 comp sink area) and hand sinks to remove any water sources. Comments

Cotton candy station has minimal to no droppings. Majority of food items are in sealed containers, protected from contamination. Advise to complete deep clean of all corners, edges and behind doors of all areas of the facility. Recommend bleaching sweep, dustpan and mop to prevent rodent droppings and odors from being spread throughout the facility during cleaning. Pest control needs to be called to control the current situation and come up with long term management solutions for the facility. Long term solution needs to be implemented for dry storage of popcorn kernels to prevent bags of kernels from being bitten into or penetrated. Discussed with Manager, deep clean scheduled for before production begins tomorrow morning. Pest control contractor to be called today. Thank you.
