Observation: - Staff observed washing hands with gloves on.
- Ceiling tile missing instorage area
Corrective Action(s): - Please review the proper use of gloves with all staff. When contaminated gloves must be changed. Hands must be washed before placing new gloves on it. Improper use of gloves contaminates food that is being handled.
- Replace missing ceiling tile.

Comments

Temperature of coolers and freezers were adequate
Liquid soap and paper towels were present at hand sinks.
Dishwasher final rinse temperature was 76 degrees C.
Bleach sanitizer solution was available for wiping clothes. **Please provide sanitizer solution for sushi bar prep area and ensure that work-counters are sanitized ever 2-3 hours.

Please continue to replace old and worn out equipment including shelves.
Fix holes in walls and repaint areas that need it prior to placing new equipment.
