-Ensure that pest proof containers with tight fitting lids are purchased for foods in the storage areas.
The dishwasher has been installed at reached 77 C at the plate level.
Check that it is working daily. The temperature at the manifold should be minimum 180 F. It can also be checked with a thermolabel test strip or with a maximum hold thermometer.
