Observation: 1. Black organic buildup noted in the Pepsi drink dispenser nozzle head.
**Issue corrected during the inspection** - All nozzle heads noted in a sanitary condition.
2. Black buildup noted by the plastic drop plate inside the ice machine.
Date to be corrected by: End of tonight
Corrective Action(s): 1. Wash, rinse and sanitize all the nozzle heads in the drink dispenser. Clean the nozzle heads as often as required as per your Sanitation Plan to prevent organic buildup.
2. Empty out the ice machine and wash, rinse and sanitize as per the manufacturer instruction. Pay attention around the plastic drop plate and corners within the ice machine.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No paper towel noted in the handwash station in the salad/ dessert area.
**Issue corrected at the time of inspection** Manager refilled the paper towel dispenser.
Corrective Action(s): All handwash station must be equipped with hot and cold running water, liquid soap and paper towel at all time to allow employees to use when required.

Observation: 1. Two 946 mL of half and half cream noted in the bar reach-in cooler with best before dates of March 06, 2022 and March 18, 2022.
2. One 2% 2L milk noted in the server reach-in cooler with best before date of March 22, 2022.
**#1 and #2 - Operator discarded all the food products that were past the best before dates**
3. Dessert noted stored unprotected in the single door reach-in cooler in the salad/ dessert area.

Corrective Action(s): Discard any products past the best before date. We cannot guarantee the safety and quality of the food once past the best before date.
Put plastic wraps over the dessert noted in the reach-in cooler. All food products must be stored protected at all time to avoid potential cross-contamination.

Observation: Some fruit flies noted in the bar area and in the salad/ dessert area.

Corrective Action(s): Work with your pest control company to maintain the current fruit flies issue. Fix, clean and sanitize any pooling liquid observed and remove all potential breeding grounds and food source for the fruit flies.

Observation: 1. Buildup noted on the floor below the ice machine.
2. Buildup noted on the floor in the dry storage area.
3. Black buildup noted along the seam and hinges of the reach-in coolers along the prep line holding potatoes and bacon.
4. Heavy grease buildup noted in the cabinets of the deep fryers.
5. Dust noted by the vent in the walk-in cooler.
6. Black buildup noted on the curtain of the clean side of the dishmachine.
7. Organic buildup and debris noted in the bar reach-in cooler.

Corrective Action(s): Clean the abovementioned areas. Maintain all areas of the premises in a sanitary condition.

Observation: A bowl and a 2 qt container found within two bulk flour containers.

Corrective Action(s): Remove the bowl and 2 qt container from the bulk flour containers. These are NOT to be used as scoops as they do not have proper handles. Replace with a proper scoop with handle and store either on top of the flour container or within the flour container with the handle extending and not touching the food content.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Leaking and pooling water noted in the 10 door reach-in cooler and single door reach-in cooler in the salad/ dessert area.

2. High temperature dish machine was unable to reach 71C at the plate level during the rinse cycle. Highest temperature reached was at 65C after running at least 3 times. Operator called the machine in for servicing during the inspection.

Corrective Action(s): 1. Fix the leaking cooler units. Pooling of water may become an attractant to pests, especially fruit flies are observed in the area. It may also contaminate food stored within the unit.
2. Do not use the high temperature dish machine until it is able to reach 71C at the plate level during the rinse cycle. The unit has another functioning high temperature dishmachine, use mainly for glasswares, please use that only for the time being for washing dishes until the main dishmachine is fixed.

All handwash stations (except for the one noted in violation 401) were accessible, equipped with hot and cold running water and liquid soap.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
Sink and Surface Cleaner Sanitizer used as sanitizer - spray bottles containing this sanitizer noted throughout the prep area - 700 PPM detected.
Proper storage of chemicals observed.
High temperature dish machine (used mainly for glasswares) was able to reach 71C at the plate level during the rinse cycle. Please only use this machine until the main unit is fixed.
