Observation: * Some build up noted in kitchen along baseboards and lower sections of food equipment. Also, behind dishwasher along wall area and down corridor to back door, build up/grime, etc., noted. Also, shelving across from grill area to be cleaned as build up noted on some items that requires detailed cleaning. Also, clean all areas under dessert buffet line to remove build up and grime, etc
Corrective Action(s): * Ensure all baseboards, floor cornersn and food equipment properly cleaned/maintained at ALL times to maintain sanitary condition

Observation: * Shelving for dry storage area requires upgrade as it has deteriorated badly and not food grade any more. Shelving to be food grade (eg. FRP board, laminate, etc) and easy to clean, etc.
Corrective Action(s): * Ensure ALL shelving in proper working order and easy to clean/maintain for sanitary maintenance

Observation: * Caulking along dish washing area has deteriorated badly. Mold and moisture building up along this area that requires redoing.

* Food was covered in storage areas
* Monitoring records were in place for cleaning/temperatures
