Observation: Food residue and dirt debris noted under the dry storage shelf near the mop sink food and dirt debris also noted under the cookline. Minor fruit flies were noted near the mop sink area.
Corrective Action(s): Corrective Action: Ensure food and dirt debris are being removed. Clean up dirt and debris under the shelving area at mop sink area, and under the cookline to prevent breeding and harbouring of fruit flies.

6-door prep cooler on the right : 4C
-> meat patty internal temp : 3.7C
Prep Freezer near fryer : - 5C and used to store flour coated calamari and onion rings
-Hot holding for gravy : 65C
-Hot holding for broth : 93C
-Rice : 65C near prep cooler
-Rice : 85C near salad processing area
-Walk-in cooler : 4C
-Walk-in freezer : -19C
-Walk-in drink cooler : 7.5C
- only alcohol, drinks, and non potentially harzardous food were being stored inside
- Operator claimed that the drink cooler is under repair and they will only store non-potentially harzardous food inside
- Drink cooler in bar area : 1C
Sanitizer concentration :
- All sanitizer concentration measured in buckets and spray bottles are 200ppm QUATs.
- Staff claimed that all sanitizers for food contact surface are being replaced every 2 hours.
- Glass washer : 100ppm chlorine on plate level
- Low-temp dishwasher : 100ppm chlorine on plate level
- Ventilation hood is visibily clean not passed the next inspection day
- Premise is maintaining a temperature log for all refrigeration units and they check it twice daily
- All hand washing stations are fully equipped with hot and cold running water, liquid handsoap and paper towel.
- Permit is posted on a prominent location
- At lease one staff on-site have valid FoodSafe Certificate.
- All ice machines are clean, and scoops are stored in a sanitary manner.
- All in-use utensils are stored on ice bath and staff change the ice every hour.
