Comments

Hand wash stations were had hot/cold running water, soap and paper towel. All coolers 4C or less (walk in cooler, under counter coolers, sandwich prep cooler) Walk in freezer -19C All hot holding higher than 60C (egg patties, potato wedges, hash browns, bacon, soup, steak, patties...etc) Probe thermometer available on site to check internal temperature of foods. Ensure probe is sanitized between uses. Good general sanitation. No obvious sign of pest activity noted at time of inspection. Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container. Quat sanitizer at source and in containers with cloths submerged in the front service area 200ppm. Test strips available. Manual ware washing procedures reviewed at time of inspection. Drain plugs x3 available. All stored foods appeared protected (ie. stored off the ground, covered, lights had covers..etc)
