Observation: Floor of walk-in cooler observed dirty. Some boxes etc. stored directly on floor.
Dim sum prep station/area observed dirty, and handsink in area used for food prep.
Corrective Action(s): Clean up the floor, including corners, around legs of shelves and general hard to reach areas. Send picture of completed work.
Improve daily clean up of wall/backsplash, counter top and handwash station in this area.
**Make sure handwash station remains uncluttered and available for handwashing.

Make sure staff maintain log book for live fish holding - Temp./pH/Salinity and cleaning schedule should be maintained.
soap dispenser in staff washroom plugged and flow is limited. Make sure liquid flows better so staff more likely to use.

Painting of wall around dish pit still recommended - not completed yet.

Freezers below -18 C,
handwash stations mostly stocked and ready (note comment on employee washroom).
Dishwasher OK.
