Observation (CORRECTED DURING INSPECTION): Three trays of cooked potato bites were cooling at room temperature. Internal food product temperature measured at 18C. Staff stated the food were cooled at room temperature for approximately 2 hours.
Corrective Action(s): Staff moved the trays of potato bites into the walk-in cooler. Educate staff on proper cooling procedure. Potentially hazardous food must be cooled from 60C to 20C in 2 hours, and 20C to 4C in 4 hours.

Observation: 1. Dried food debris observed on the metal guard for the dough mixer stored inside the dry storage room.
2. Accumulation of dust observed on the metal knife holder inside the dry storage room.
Corrective Action(s): Clean and sanitize the dough mixer and knife rack. Follow you sanitation plan for regular sanitizing schedule. In addition, clean and sanitize all the knives stored in the dirty knife holder before using them. Correct by: Immediately.

Observation (CORRECTED DURING INSPECTION): Food surface sanitizer not available at the kitchen area. Staff was in the process of mixing sanitizer in pail at the start of inspection.
Corrective Action(s): 200 pppm bleach sanitizer in pail was prepared by staff for the kitchen area. Ensure sanitizer is available at all times during operation.
