Specific comments: Met with owner and discussed the following:

- bleach is used as approved sanitizer. Please store all wiping clothes in the sanitizer.
- new freezer installed
- walk in cooler construction - completed ( measured 3C air temperature )
- new domestic dishwasher BOSH is purchased. Please ensure that this dishwasher MUST meet commercial dishwasher requirements ( such as the final rinse temperature to be at 82C or plate temperature at 71C). Until this requirements are met, please use approved manual dishwashing procedure at 3 compartment sink ( wash, rinse, sanitize )
- back/storage area need to be clean and organized
NOTE: Mail the daily temperature logs and FH emergency situation bulletin.
