Routine inspection conducted due to ownership change:
- Coolers 4C or colder; freezers -16C or colder; thermometers present.
- High temperature dishwasher rinse cycle temperature was 83.7C at the plate' s surface as per max/min thermometer. Test strips present.
- Hand sinks stocked with liquid soap, paper towels, and running hot + cold water
- Premises set up as per approved floor plans.
- Domestic exhaust fan (exhaust into facility) above the combi oven. Not adequate for cooking of proteins. Cooking of proteins being done at "Giggle Dam Theatre" kitchen. This is approved and covered in the FSP.
- FSP + SP approved.
- FoodSafe certified staff present
- All foods stored in food grade containers; labeled; covered; date coded; stored in groups w/proteins separate or below RTE foods; and all foods stored 6" off the floor.
- Bleach sanitizer in spray bottle had [cl2] of 50-100ppm. Increase the leach strength to be 100-200ppm. Test strips present.
- General sanitation level is good.
- No signs of pests.
- All in order.
