Observation (CORRECTED DURING INSPECTION): Condensate or unknown liquid coming out of the fan unit in the walk-in cooler was dripping directly into an uncovered bowl of marinated meat product.

Observation (CORRECTED DURING INSPECTION): 3-door bar reach-in cooler was unable to maintain an ambient temperature of ≤ 4C at the time of inspection. Unit was noted at an ambient temperature of 8.9C. Picture evidence was collected.
Corrective Action(s): **Issue corrected at the time of inspection**
The following cold potentially hazardous food that was stored in this cooler unit was discarded. A box of sliced meat (9.7C), a box of meat and sausage (8.7C), 1 open container of mayonnaise (12.0C) and 2 squeeze bottles of mayonnaise (14.9C).

Observation (CORRECTED DURING INSPECTION): A clean cutting board was stored in a dirty open cabinet in the bar area.
Corrective Action(s): **Issue corrected at the time of inspection** Cutting board was removed from the current storage location to be washed and sanitized again. All clean equipment and utensils must be stored in a sanitary manner after cleaning to avoid contaminating them before use.

Observation: 1. In the walk-in freezer, the following food was noted stored uncovered - 3 containers in total of spring rolls, meat products/ bones and broth.
2. An uncovered pot of marinated meat was stored in the walk-in cooler. An uncovered container of marinated meat (appeared to be portioned from this pot) were stored in the walk-in cooler and noted contaminated with condensate or unknown liquid from fan unit - item discarded.
3. Raw chicken stored beside the container and pot of marinated meat.
4. Bean sprouts, sliced lemons and sliced jalapeno stored uncovered in the bar area.
Corrective Action(s): All food MUST be stored protected and covered at all this. This is evidence with today's inspection when condensate/ unknown liquid from the fan in the walk-in cooler contaminated the unprotected container of meat. Fruit flies were also seen gathering around the bean sprouts, sliced lemons and sliced jalapeno, possibly contaminating the food when they land on them.
Store food in the proper storage hierarchy with raw food below and away from cooked and ready-to-eat food and produce.

Observation: 1. Buildup noted on the interior of the dishmachine.
2. Debris and buildup noted on the wall below the dishmachine.
3. Grease and buildup noted along the fume hood.
4. Mouse droppings noted in the mop room beside the walk-in cooler and in the back storage area.
5. Debris and black buildup noted in the open cabinet in the bar area - originally holding the clean cutting board.
Corrective Action(s): Clean the abovementioned areas and maintained in a sanitary condition.

Observation: 1. 3-door bar reach-in cooler was unable to maintain an ambient temperature of ≤ 4C at the time of inspection. Unit was noted at an ambient temperature of 8.9C.
2. Dripping condensate or unknown liquid coming from the fan unit in the walk-in cooler.
Corrective Action(s): 1. Do not store any cold potentially hazardous food products inside this cooler until it has been serviced and able to maintain at or below 4C.
2. Fix the fan in the walk-in cooler to avoid contamination of food products stored below.

Routine inspection conducted today:
Handwash stations, including washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
Bleach sanitizer solutions available in the kitchen area and bar area. All noted with proper name labels and detected with 200 ppm chlorine residual - excellent.
Low temperature dishmachine noted with 100 ppm chlorine residual at the plate level after the rinse cycle.
All refrigeration units (except for the one noted in violation 308) noted at ≤ 4C.
All freezer units noted at ≤ -18C.
Ice machine interior noted in a sanitary condition.
Did not observe improper scoops stored within bulk food containers.
No dirty mop water noted in the mop bucket at the time of inspection.
Did not observe boxes stored directly on the floor throughout the facility - great improvement.

Despite the violations noted, overall there is improvement from the last routine inspection.
