Observation: Of the three employees remaining at ~ 2:55 pm, one was a trainee, one was 2 weeks into the job, and the third was a 1 month into job. Reviewed wareashing procedures with staff who advised: rinse, soap and sanitize.
Corrective Action(s): Reviewed proper warewashing procedures with staff: wash, rinse, sanitize and air dry.

Observation: Rear storage door observed to be partially open again. Two rodent droppings observed on back shelving and throughout ground level (photos taken).
Corrective Action(s): Remove all droppings, clean and sanitize affected areas. You will have to pull out all stock in storage to do this (1 week).

Observation (CORRECTED DURING INSPECTION): A donut rack observed to have excessive carbon buildup (photo taken).
Corrective Action(s): Rack removed from operation.

Observation: No staff on site was foodsafe certified, including supervisor. During change of shift~ 2:30 pm, oncoming shift members also did not have foodsafe.
