Sandwich prep cooler not in operation. Sandwich items stored in walk-in cooler. OK as long as walk-in cooler maintains good temperatures. Cooler temperatures less than 4 C. Hot holding above 60 C. spray sanitizer at 200 + ppm quats solution. dishwasher at 75 C at plate. No issues at time of inspection
