Observation (CORRECTED DURING INSPECTION): Wiping cloth bucket measured 0PPM quat residual.
Corrective Action(s): Buckets were refilled and then the residual measured 200 PPM Quat. Ensure that these are changed every two hours as per procedures.

Warmers for gravy, chicken, onions and meat patties all were maintaining foods at 60 degrees Celsius or hotter.
Liquid soap and paper towel available at handsinks.
Dishwasher reached 74 degrees Celsius at the plate surface during final rinse.
