Observation (CORRECTED DURING INSPECTION): Quats sanitizer solution in bucket with cloth registered at 0 ppm for quats.
Corrective Action(s): Operator made a new quats sanitizer solution. New solution registered at 200 ppm of quats. Ensure sanitizer solution is of adequate strength at all times. Use test strips to verify concentration.

Hand washing sink equipped with hot and cold running water, liquid soap and paper towel. Ensure blenders and other equipment are not stored in the designated hand washing sink.
Sanitizing compartment of the three-compartment sink filled with Quats solution that registered at 200 ppm.
Standing coolers at 4 C or below.
Undercounter coolers at 4 C or below.
Display cooler at 4 C or below.
Walk-in freezer at -18 C or below
Ice cream cooler at -18 C or below.
Ice bath for yogurt required more ice at the time of inspection.
Temperature logs maintained.
Dipper well in use.
Food is stored 6 inches off the floor.
*Ensure all food stored in coolers is labelled and covered. Acai juice was discarded at the time of inspection as it was unlabelled, uncovered, and undated.
*Remove all equipment that is not required for the operation of the food premises.
*Recommend storing all records for maintenance (i.e ice machine cleaning) and pest control on site and be readily available upon the request of the environmental health officer.
