General observations:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Steam table was 60-61 degrees Celsius; Rice warmer was over 60 degrees Celsius.
Food storage and display practices are satisfactory.
Hand sinks are stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water
General sanitation is satisfactory.
No signs of pests.
Chemicals are stored in a safe manner.

Discussed with owner and cook that between lunch and dinner (i.e. typically slower period of each day) the should not store too much food on the steam table. The amount of food should not exceed the top rim of each steam table insert to ensure food is maintained at 60 degrees Celsius or higher. Also discussed with owner and cook about making sure clean the fan of the compressor in the walk in cooler to prevent accumulation of dust.
