Observation (CORRECTED DURING INSPECTION):
Deep cleaning required in the back area (walls, floors and especially in the pop machine area).
Dishwashing area also requires attention.
Drain from the beer cooler was clogged. There was no air gap between the drain and the pipe.
Corrective Action(s):
1. Back area to be thoroughly cleaned. Remove any items not required for the business.
2. Dishwashing area - staff started cleaning underneath equipment and tables.
3. Drain has been cleaned so that there is air gap. Continue to clean drain to remove any build up.

Comments

Checked for signs of pests in the back and the kitchen area. There was none noted.
Crawl space above kitchen had no signs of droppings.
Traps noted in the crawl space. Also, motion detectors have been installed in this area as per management.
Pest control monitoring actively in place.

Recommendations:
**Keep kitchen area and back area in sanitary condition. Follow your Sanitation Plan procedures and cleaning schedules.
**Store all foods and food-related items off the floor and protected with packaging.
**Clean all drains on regular basis as per the premises Sanitation Plan.
