Observation: Food in walk-in cooler measured at 8-10 C, limited number of Milk, cream and delli meat are stored in the cooler. Milk measured at 6C and moved to under the counter coolers. Meat is Prepackaged and is at 8C They are moved to different cooler at the time of inspection.
Corrective Action(s): Do not store any potentially hazardous food until the cooler is repaired. Utilize all other under the counter coolers to store perishables.

Routine inspection

- Hand washing stations are provided with hot/cold running water, liquid soap and paper towels.
- Sanitizer QUAT measure 200ppm in the buckets with wiping cloth. wiping cloth are stored in the solution at the time of inspection.
- Under the counter coolers are at or below 4C. Food in cooler with insert measured at 4C or colder.
- Walk-in freezer is at or below -18C
- Hot holding units are at 60C or hotter. Soup hot holding is at or above 60C.
- Proper temperature probing of the cooked food was observed at the time of inspection.
- Dishwashing registered at 78C at the dish surface.
- Dish washing racks and dry racks are maintained.
- Three-compartment dishwashing sink maintained.
- Staff hygiene is good.
- Ice machine is clean and ice scoop stored out of the ice in a container.
- No obvious sign of pest at this date.
