**Cooked tapioca pearls must be kept hot (≥60C) or cooled properly and kept cold (≤4C). Room temperature storage of tapioca pearls is not permitted unless time tracking and record keeping is maintained - maximum 2 hours at room temperature, leftovers must be discarded. Operator to decide which method will be followed and updated Food Safety Plan accordingly.**

- Handsinks are accessible and provided with hot and cold water, liquid soap and papertowels.
- Coolers are maintaining acceptable temperatures (≤4C).
- Freezers are maintaining acceptable temperatures (≤-18C).
- Hot Holding Units are maintaining food at acceptable temperatures (>60C).
- Interior of ice machine appears maintained in a sanitary condition. Ice scoop stored outside ice machine in a clean container.
- 200 ppm chlorine bleach solution available in both kitchen area front beverage service area.
- High Temperature Sanitizing Dishwasher: 73.9C at dish surface. Minimum Wash and Rinse temperatures achieved per unit data plate.
- General sanitation of premises appears satisfactory.
- No signs of pest activity noted at time of inspection.
- Permit to Operate posted. **Affix valid decal on Permit to Operate.**

Note: Employees state that previous proposal to install an ice cream vending machine in the dining area of the premises has been cancelled. No plans to install ice cream vending machine in dining area. **New equipment and/ or additions/ changes to the existing operation is NOT permitted without written Health Approval.
