209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Prepped food stored in walk-in cooler not covered and food containers stored directly on the floor of the walk-in cooler.
2. Inside of ice machine visibly dirty and caulking around ice machine lid worn out.
3. Bowls for gravy stored upright and directly underneath the paper towel dispenser allowing them to get contaminated.
Corrective Action(s): 1. All food must be covered and stored 6 inches off the floor. Correct immediately.
2. Clean ice machine. Correct immediately Replace worn out caulking by August 13.
3. Bowls were removed and placed for washing at the time of inspection. Bowls can be stored upside down on a clean tray or stored at a different location.

Observation: Back door kept open while staff are on break to allow them easy re-entry.
Corrective Action(s): Keep back door closed at all times. Consider installing a screen that does not lock for when staff are on break or find another solution.

Routine Inspection:

-Walk in cooler less than 4 C.
-Walk in freezer less than -18 C.
-Food in hot holding units greater than 60 C.
-Under counter prep cooler and inserts less than 4 C.
-Liquor walk in cooler less than 4 C.
-High temperature dishwasher reached 75 C on plate surface during the final rinse.
***Note: you may need to run the dishwasher a few times at the start of the day before it reaches an adequate temperature of 71 C. Verify temperature daily and record.
-Bar glass washer registered at 12.5-25 ppm for iodine.
-Hand washing sinks equipped with liquid soap, hot/cold running water and paper towels.
-Surface sanitizer available throughout the establishment and registered at 200 ppm for Quats. Reminder: Quats sanitizer bottles should be tested frequently to ensure they are of adequate strength (200-400 ppm). Wiping clothes do not need to be laundered after each use if they are stored in an adequate sanitizer solution (clean water and 200-400 ppm Quats).

***Reminder: Ensure all food products are cooked as per your food safety plan. Verify cooking temperatures of potentially hazardous foods such as beef patties and chicken with probe thermometers daily and maintain records.

***Note: Smoking within 3 m of workplace doorways is not permitted. Please remind staff to smoke 3 m from doorways/windows/air intakes.
