Routine Inspection Coolers at 4 C or below. Ice cream freezer at -15 C. Ice cream scoops are rinsed after each use. Soup hot held at > 60 C. Food is prepared in main kitchen only. Hand sink equipped with hot and cold running water, liquid soap and single use towels. Dishwasher registered at least 71 C on plate surface during final rinse. Quats available in a spray bottle - cloth should be stored in a sanitizer solution or laundered after each use/use single-use towels. Quats filled from main kitchen - dilute as necessary.
