Observation (CORRECTED DURING INSPECTION): At the time of inspection dishwasher registering 0ppm chlorine during the final rinse cycle. Operator stated sanitizer line is clogged and has called for servicing. Servicing to be done February 3 or 6.
Corrective Action(s): Operator properly demonstrated manual warewashing procedures with a final rinse in 100ppm chlorine in the 2 compartment sink. Note: premise is closed on Sat/Sun. Adequate supply of takeout single service utensils onsite.
