- Display cooler was 4 C - Under counter milk coolers were 3 C - Sandwich cooler was 1 C - 2 door upright cooler was 2 C - Freezer on left - 7 C (food was being unloaded just prior) - Freezer on right was on defrost, food still frozen. Monitor to ensure temperature continues to drop. - Hand sink had liquid soap, paper towel, hot and cold water - No signs of pest activity noted during inspection - General sanitation is satisfactory - Dishwasher had a final rinse of 78 C at plate and 182 F at gauge - Wiping rags were in 200 ppm quat (changed every 2 hours or when heavily soiled).
