Observation (CORRECTED DURING INSPECTION): No sanitizer was present in the front work area and sanitizer spray bottle in the back was tested at 50ppm.
Corrective Action(s): Sanitizing solution at 200ppm is required in each food preparation area to ensure food contact surfaces are properly sanitized. Sanitizer bottle was placed in the front work area and sanitized bottle in the back work area was refilled and tested at 200ppm at the time of inspection.

Observation: Sanitizing compartment for the 3-compartment sink is not functioning properly - plug does not keep sanitizing solution in the sink.
Corrective Action(s): Service 3-compartment sink to ensure it can properly plug water to allow for proper sanitizing of equipment and utensils. Equipment must be soaked for 2 minutes in sanitizer to allow for proper sanitizing. While sink is being repaired, use the middle compartment for sanitizing equipment and utensils.

Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle was unlabelled at the time of inspection.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing or misuse of chemicals. Sanitizer spray bottle was labelled at the time of inspection. Ensure bottles are relabelled once the labels fall off.

Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -15C.
-Sandwich coolers were both at 4C.
-Undercounter cooler was at 1C.
-Hot holding was greater than 60C. Hot held items are reheated to 74C in the microwave prior to placing into hot holding unit.
-Temperatures are checked and recorded twice daily.
-Quats sanitizer dispenser was tested at 200ppm.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Vegetable slicer was found to be clean and sanitary.
-Food items properly stored off the floor and covered.
-General sanitation satisfactory - ensure staff pay more attention to the shelving units in the walk-in cooler (mould was found on a few of the shelving units.
-No signs of pests noted at the time of inspection.
-FoodSafe level 1 certificates issued prior to July 29, 2013 (do not have an expiry date) expire on July 29, 2018. In order to recertify, students must either successfully complete a FoodSafe level 1 course or an online refresher course (foodsafe.ca).
-Informed Dining verification completed.
