Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Quat sanitizer was dispensed into three compartment sink and found to have a maximum reading of 150 PPM Quat residual after numerous tries.
Quat bottle was found to be relabelled with bleach water that was almost worn off. It measured approx 25 PPM chlorine residual.
Correction: Staff are to mix a bleach water solution in the sink for sanitizing until the dispenser of quat is found to have a 200 PPM quat residual. Do not mix bleach water with quats.
Comments

The majority of cleaning has been carried out. A few items still require addressing including refinishing behind and around sink. Under grill and on top of cooler under hot holding unit still require cleaning. As well, the computer screen, cables and the soup warmer are still in need of cleaning. Note: Professional cleaner expected to carry this cleaning out this week. If soup warmer cannot be adequately cleaned, then a new one will be required.
Sanitizer unit has been fixed and is now providing a 200 PPM quat residual.
The rusted racks in cooler have been cleaned.
