Observation: Dishwasher on site is still broken. Premises only has a two compartment sink for warewashing. No contact has been made by owner of premises regarding status of dishwasher.
Corrective Action(s): Repair/replace dishwasher.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Dishwasher on site is still broken. Removal of dishwasher is not a satisfactory option as the premises has been approved to operate with a dishwasher and two compartment sink. No contact has been made by the owner of the premises regarding the status of the dishwasher.
Corrective Action(s): Repair/replace dishwasher so that it is functional and the premises can be maintained as per the approved plans.

Comments

- All handwash stations had soap, paper towel, hot and cold running water.
- All coolers 4C or less. Freezer -18C or less.
- Ice water placed into wells for toppings. No toppings prepped/stored at room temperature at time of inspection.
- No hot holding available at time of inspections. Hot holding units were being preheated.
- Probe thermometer available to take internal temperature of foods. Ensure probe is sanitized between uses.
- All stored foods appeared protected (ie. off the ground, covered..etc).
- Lights in food preparation areas had covers.
- Ice machine appeared clean with the scoop for the ice stored outside of the ice in a separate container.
- Good general sanitation. No obvious signs of pest activity noted at time of inspection.
- Quat sanitizer at 200ppm. Test strips available to verify concentration of sanitizer solution.
- ** Operator on site did not have her foodsafe certificate available but thinks she took the course about 3-4 years ago. If foodsafe training was taken prior to July 2013 then recertification is required. Look into this and inform inspector of status within 2 business days.
