Observation: Build up of grease and food debris noticed in the following areas of the kitchen:
1. The tiled floor in front of the walk-in cooler
2. Floor in the corners under the shelves and equipment
3. Floor underneath and behind the the double door freezer
4. Floor underneath and behind all e.quipment and in all hard to reach areas.
5. Shelves above the hot holding units.
6. Dishwasher side panels.
Corrective Action(s): Throughly clean the above areas to remove all food and grease build up. This will also help to prevent pest issues. ( By Nov. 30, 2018)

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] (Quats sanitizer ( Pro Quats) tested 50 ppm in most spray bottltes. The dispensing system does not appear to be functioning or lablelled properly.)
Comments

* Ensure to use an appropriate de-greaser for cleaning the floor as per manufacturer's instructions.
* Re-install missing tiles in front of the walk-in cooler or re-level the floor to ensure proper cleaning in that section. ( ASAP).
* Coca-cola cooler in the front bar section registered 6 degrees C. Repair or adjust as necessary to ensure it maintains 4 C or below.
*Ensure to test the quats sanitizer from the dispenser and chlorine sanitizer in the dishwasher once/day.

Walk-in cooler: 3.4 degrees C.
Preparation cooler below 4 C.
Small bar fridge < 4 C.
Hot holding of potatoes and rice > 60 C.
Dishwasher final rinse: 100 ppm chlorine at the plate surface
Quats sanitizer in the spray bottles tested 200 ppm.
Hand wash sinks stocked with liquid soap and paper towels.

General sanitation requires your regular attention.
