Observation (CORRECTED DURING INSPECTION): Found a box of tomatoes and parmesan cheese stored below stored raw meats in pans.
Corrective Action(s): To prevent any potential of cross-contamination, all raw meats/poultry items must be stored in dripless containers BELOW any vegetables,salad greens and cheeses/ready-to-eat items.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Heavy build up of dirt, grease and food build up noticed on the floors in most sections of the kithen. Build up also noticed inside coolers and the dish wash tables.
Corrective Action(s): Thorough cleaning required of the following areas: ( By September 22, 2019)
1. Floor underneath the dish pit
2. Floor underneath the kitchen hand wash sink and under the entire cookline/ovens.
3. Floor in corners and all hard-to-reach areas including under the strairs and behind the freezer in Dry Storage room.
4. Staff washroom and recyclables storage areas.
5. Behind and underneath the ice maker
6. Behind and underneath the green dry food storage bins
7. Floor in the walk-in cooler
8.Interior surfaces and shelving in the walk-in cooler.
9. Interior of the keg cooler ( remove condensation build up)
10. Under cabinets in the bar area

* Ensure that mop buckets are always dumped in staff washroom toilet as there is no mop sink.
* Ensure that meat slicer and its components are thoroughly cleaned and sanitized after each use especially after using it for raw meats.
* Remove all boxes and debris from near the south entrance to kitchen.
