Observation (CORRECTED DURING INSPECTION): Tub of basa fish observed stored on the floor outside of the walk in cooler. Internal food product temperature 15 degrees C. Staff stated this product was taken out of the walk in cooler earlier in the day.
Corrective Action(s): Discarded. Ensure all cold potentially hazardous foods are stored at or below 4 degrees C.

Observation (CORRECTED DURING INSPECTION): At the time of inspection spray bottles (some labeled as quats sanitizer) 0ppm quats and 0ppm chlorine.
Corrective Action(s): Ensure during operation an approved food contact surface sanitizer is available for use. General sanitizer formula: 1 oz of regular unscented bleach to 1 gallon of water.

Observation (CORRECTED DURING INSPECTION): Hand sink by walk in cooler paper towel dispenser empty. Bar hand sink no paper towels available for drying hands. Main cooking line hand sink paper towels no placed in dispenser. Staff washroom hand sink paper towel dispenser empty.
Corrective Action(s): Ensure all hand sinks are provided with liquid soap and paper towels at all times.

Preparation cooler storing salad ingredients, small side dishes etc for meals ambient air temperature ~8-9 degrees C. Internal food product temperatures of foods in inserts ~7 degrees C. Observed the temperature display gauge fluctuating between 4 and 8 degrees C.

Chest freezer below the first aid kit in the staff room interior lid section damaged.
Corrective Action(s):
All cold potentially hazardous foods relocated back to the walk in cooler. Immediately service the preparation cooler and ensure unit is capable of maintaining 4 degrees C or less at all times.

Operator to replace the damaged freezer. Correct by September 2022.

Existing bar cooler at 1 degrees C to be replaced with a new cooler.
Hand sink after correction provided with liquid soap and paper towels. Also after correction 100ppm bleach sanitizer available for use in spray bottle.

Kitchen:
Hand sinks after correction provided with liquid soap and paper towels.

Dishwasher registers 76 degrees C at the plate surface during the final rinse cycle.
