Observation (CORRECTED DURING INSPECTION):
1) Ingredients kept on counter measured approximately 7-10C, depending on level of water available in the containers.
2) Meats stored at room temperature
Corrective Action(s):
1) Operator has used ice water as per previous inspection but ice water is not changed frequently enough to maintain 4C. Operator has added ice to lower temperature. If ingredients do not maintain 4C during the follow-up inspection, the menu will be reduced accordingly.
2) Meats moved to walk-in cooler and/or sliding glass cooler.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
1) Bleach sanitizer in bucket measured 0ppm chlorine.
2) Food debris noted on meat slicer. Operator stated that it has not been used today.
Corrective Action(s):
1) A bleach sanitizer solution of 100ppm (5mL unscented household bleach in 2.5L of water) must be available at all times. A new solution was made at the time of inspection, measuring between 100-200ppm chlorine.
2) Meat slicer to be cleaned and sanitized before use.

Observation (CORRECTED DURING INSPECTION):
1) Potatoes, and boxes of frozen pork stored outside, underneath awning
2) Meat hung from coat rack, touching the back door.
Corrective Action(s):
1) All foods must be stored inside premises, or in either one of the walk-in cooler OR the three-door cooler. No food is to be exposed to the elements. Foods moved inside walk-in cooler at the time of inspection. This is a repeat violation. If storage of food continues to be a problem, your menu will be reduced accordingly.
2) Meat has been moved to a food grade container.

Observation:
1) Mop bucket full of dirty water stored outside.
2) Baskets, cardboard boxes, foam boxes, empty cans and bottles stored outside.
Corrective Action(s):
1) Empty mop bucket as soon as cleaning is complete to avoid attracting pests. Fly traps outside along the fence (by the mop bucket) are full. This is a repeat violation.
2) Remove all clutter to prevent pests.
