Undercounter dairy cooler: 3.9 deg C Sandwich prep cooler: 3.4 deg C. Front sliding glass door cooler - satisfactory. All freezers at -18 deg C or less. Chemical dishwasher achieved 50 ppm chlorine residual on rinse cycle. Hot holding at 70 deg C (soup). Quats sanitizer spray at 200 ppm QUATS. No signs of pests.
