Follow-up inspection conducted. The double door preparation cooler has been repaired. It was maintaining an ambient temperature of 4 degrees Celsius. Ensure the temperature is regularly checked and documented in a temperature log. NOTE: Keep the ventilation hoods on when the burners are in use. This will also help ventilating the heat in the area around the cooler.
