Observation: Observed white stand-up freezer handle in unsanitary condition. Food debris and grease build-up noted. Can opener in the back area observed to be in unsanitary condition as well. Both items/area get used daily and as such, daily cleaning is required.
Corrective Action(s): Required operator to clean and sanitize the freezer handle and can opener.

Observation: Found items in the kitchen and in the walk-in cooler that are not adequately covered:
1. Catering sandwiches and other items beside prep table near back entrance
2. Several items in the walk-in cooler
All items must be adequately covered when not in use at all times to prevent physical contamination
Observed large bags of onions stored on floor under prep table next to tandoori oven. All food items must be off the ground 6 inches and stored in safe manner.
Corrective Action(s): Required operator to cover all items that are currently not in use to ensure they can be protected from physical contamination. All items must be stored off the ground away from potential contamination area.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Observed hard to reach areas under and behind cooking equipment with food debris and grease build-up. Minor build-up but still require attention as grease can be a fire hazard. Hard to reach area is more difficult to clean with clutter in the kitchen.
Corrective Action(s): Required operator to de-clutter the area and clean then sanitize the area. Ensure regular cleaning is performed to maintain sanitary conditions at all times.

Bleach sanitizer bottle being used; detected > 200ppm of residual chlorine. Education provided that 1/2 teaspoon of bleach per 1 litre of water is sufficient.
