Observation: High temperature dishwasher was not achieving the sanitizing standard. Dishwasher final rinse temperature was below 71 degrees C (actually at 54.3 degrees C at the plate). It was turned on about 1.5 hours ago. Owner/Operator contacted the district EHO as they noticed that it was not consistently maintaining the sanitizing standard and Owner/Operator were already manually sanitizing all food contact surfaces in 100 ppm chlorine sanitizer after running it through the dishwasher. They stated that they would replace this dishwasher as this seems to be a more feasible option than repairing it and are looking into this today.
Corrective Action(s): Only use single-use disposable service utensils (single-use cutlery, plates, cups, etc.) to serve customers. Continue manually sanitizing the food equipment/preparation utensils used in the food service establishment in 100 ppm chlorine sanitizer upon washing it through the dishwasher. This is to be conducted until you have written health approval from the district/covering Environmental Health Officer to use reusable service utensils again.

Either repair or replace the dishwasher with a commercial dishwasher so that it can maintain a sanitizing standard (i.e. either at least 71 degrees C at the plate for high temperature dishwashers or at least 50 ppm chlorine sanitizer at the plate after the final rinse cycle of a low temperature dishwasher); Correct by July 13, 2018. Provide an update to the district Environmental Health Officer by July 12, 2018.

A follow up inspection will be conducted this week to check for compliance with the aforementioned corrective action. Failure to comply with the aforementioned corrective action will result in enforcement action as per Fraser Health's Progressive enforcement policy.
