Facility re-opening after renovation. Final construction work and cleaning still occurring at the time of inspection. Kitchen entrance kept covered during renovation.
-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory. All walk-ins left on during renovation.
-All foods re-prepped from scratch today. Containers in walk-in cooler labelled with today's date.
-200ppm QUAT available in spray bottles and buckets. Dispenser at >>200ppm. Ecolab technician will be on site before opening.
-Sealing on freezer doors by the grill repaired. Unit not on and not in use yet. Ensure the unit is operating at or below -18'C prior to storing foods.
-Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.

Facility may reopen for business, conditional on that following requirements are met prior to opening:
-QUAT dispenser is adjusted to dispense correct concentration.
-All prep surfaces in servery, kitchen and bar are re-sanitized using 200ppm QUAT.
-Final cleaning of the kitchen area- floor
-Ice sink should be sanitized before refilling.
-All construction equipment should be removed from the facility.
*If to leave the bar area closed for tonight's operation, ensure the area is kept enclosed and access is prevented from customers using washrooms (i.e. partition).
