302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottles were made available throughout the food prep area - excellent. Most were noted with 400 PPM QUAT residual. However, one of the spray bottle was detected with no QUAT residual.
Corrective Action(s): **Issue corrected during the inspection** Staff refilled the QUAT spray bottle immediately when this issue was brought to their attention. 400 PPM QUAT was detected after this bottle was refilled.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Back door was opened at the time of inspection. One of the screen doors installed over the back door was noted fraying at the bottom - this leads to a gap that was larger than 1 inch where pests may gain access into the facility.
Corrective Action(s): Install a new screen door that will prevent pest entry into the facility when the back door is open.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Debris and buildup noted on the floor in the hard to reach areas behind the cooler units and cabinetry.
Corrective Action(s): Move aside any equipment on casters and clean the hard to reach areas noted with debris. This should be done on a regular basis to prevent buildup in these hard to reach areas.

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
Note: Paper towel was available in the staff washroom in unit #102, however please install a paper towel dispenser for this washroom to protect the paper towel from being contaminated before use.
All refrigeration units were at 4.0C or below.
All freezer units were at -18C or below.
Food not for immediate use were stored protected and in the proper storage hierarchy.
Food stored in the hot hold units were held above 60C.
Cleaned utensils and cutting boards were noted in good conditions and stored in a sanitary manner.
Fume hood and interior of the ice machine noted in a sanitary condition.
High temperature dish machine was able to reach 73.6C at the plate level during the rinse cycle.
No signs of pest activities noted during the inspection.
Operator's FOODSAFE level 1 certificate verified.
