Ensure sanitizer solution is changed every 2 hours at a minimum, or sooner if solution becomes visibly dirty.
Store wiping cloths in bleach solution bucket in between uses.

- Hand sink supplied with hot and cold running water, liquid soap, and paper towels
- Dishwasher had 100 ppm chlorine residual at plate surface after rinse cycle - good
- Chlorine test strips available for monitoring dishwasher/sanitizer concentrations
- All coolers were at or below 4C
- All freezers were at or below -18C
- No hot holding at time of inspection
- Cooling of hot foods occurring at time of inspection - cold water bath being used and cooling in small portions - good. Ensure hot foods cool from 60C to 20C within 2 hours and from 20C to 4C in a cooler within 4 hours.
- Food storage practices good - all food stored properly covered/protected from contamination
