Observation (CORRECTED DURING INSPECTION): Food crusted on inside of "clean" pans.
Corrective Action(s): Foods must be scraped off equipment and utensils before being placed in the dishwasher. Staff rewashed dirty pans at the time of isnpection.

Observation: Scoops stored directly in dry ingredients.
Corrective Action(s): Scoops must be stored up and out of ingredients to prevent cross-contamination. Scoops handles have food debris on them.

Observation: Frozen meat thawing at room temperature by back walk-in cooler.
Corrective Action(s): Foods must be cooled in walk-in cooler or under cold running water.

Comments

- sanitation has improved; food no longer crusted under cooler door handles
- dishwasher appears to be cleaner (rinse water is no longer coloured with food)
- forward sanitation plan to the undersigned; reminder that the ice machine must also be added to your sanitation plan
- foods in buckets being cooled in ice baths
- in discussion with manager, manager appears to be familiar with food handling temperatures - manager must retrain all kitchen staff

- if violations are repeated at future inspections, further enforcement action will be taken, up to and including:
- reducing the menu
- reducing number of seats in the restaurant
- violation tickets
- Closure Orders

Note: Restaurant will be closed September 19, 2019 for renovations (painting and replacing greasy ceiling tiles). Use this day to deep clean kitchen.
Note: Facility manager has stated that catering services will be moved to another location in Abbotsford to reduce the strain on the current kitchen. Submit all documents for health approval with the Abbotsford Health Protection Office
