Observation: The facility is limited in space and is quite cluttered. Food spills noted under the stove. Some utensils on racks were not cleaned properly. A fan that is heavily covered with dirt was in use in the kitchen.
Corrective Action(s): 1. Deep clean is required under the stove
2. Coolers shall be emptied to sanitze the surface thoroughly
3. Clean the fan before use, or remove the fan from the kitchen
4. Knives and other utensils that are visibly dirty shall be washed and sanitized

Comments

- Handsink was maintained with hot & cold running water, liquid soap and paper towel
- Sanitizer did not have enough chlorine concentration at the first check. The operator was asked to prepare a new bottle of sanitizer of 100ppm chlorine at the time of inspection.
- High temp dishwasher achieved sanitizing temperature at final rinse cycle
- Temperatures of refrigeration units were adequate (<4C for coolers and <-18C for freezer)
- A pot of sauce on the stove was at 63C. The operator informed that the sauce will be cooled and kept in the freezer
- No signs of pest infestation
- Attention to de-cluttering and cleaning required
