Observation (CORRECTED DURING INSPECTION): Egg tarts in the hot holding cabinet were less than 60C.
Corrective Action(s): Hot potentially hazardous foods must be maintained at or above 60C to prevent the growth of pathogens and or the formation of toxins. Operator stated the food items are sold within 2 hours. Potentially hazardous foods can be stored between 4C to 60C for 2 hours, if a time tracking system is implemented.

Observation: Sanitizer was stored in an unlabelled black container and water was stored in an unlabelled spray bottle.
Corrective Action(s): Ensure all containers are properly labelled to identify their contents to prevent accidental mixing and or misuse of chemicals.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -19C.
-Cake display case was at 4C.
-Upright cooler was at 4C.
Under counter cake cooler was at 3C
-Customer area cooler was at 4C.
-Upright freezer was at -13C.
-Temperatures checked and recorded twice daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer was at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails were at 200ppm. Sanitizer is replaced every 2 hours.
-Equipment was found to be clean and sanitary.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator on a weekly basis. No signs of pests noted at the time of inspection. Tin cats did not show evidence of pest infestation.
-FOODSAFE Level 1 equivalent valid until February 18, 2023.
