Observation (CORRECTED DURING INSPECTION): Manual cutter was found to have dried carrots between the blades.
Corrective Action(s): Ensure slicer is disassembled for cleaning and sanitizing after each use to prevent potential cross contamination. Slicer was cleaned and sanitized at the time of inspection.

Observation: 1) Condensed milk was stored in an opened can from the previous night.
2) Scoop was stored inside ingredient container, with the handle in contact with the ingredients.
Corrective Action(s): 1) Once canned food items are opened, the contents must be transferred into a food grade container to prevent potential contamination of foods.
2) Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods.

Observation: Bleach sanitizer was unlabelled.
Corrective Action(s): Ensure all chemicals are properly labelled to identify the contents. Containers will need to be relabelled as needed.

Comments

-Prep cooler was at 3C (bottom) - top is not used for the storage of foods.
-Upright cooler was at 4C.
-bar cooler was at 2C.
-Chest freezer was at -18C.
-Cooked pot of food cooled in a cold water bath. Cooked food is made weekly on the weekend - probed at 4C.
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plugs available.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail was at 200ppm.
-Deli slicer was found to be clean and sanitary.
-Raw meats stored properly below and separately from ready-to-eat foods.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until February 23, 2023.
