Observation (CORRECTED DURING INSPECTION): Large container of cooked cut potatoes stored at room temperature next to the preparation cooler -temperature of potatoes at 27 deg C. No time-in time out log sheet maintained, no timer maintained to ensure 2 hours is not exceeded at room temperature.

Corrective Action(s): This door needs a self-closing mechanism to keep it shut tight (no gap) when not in use. Otherwise the main doors must be closed all the time.

Observation: Dry storage area has mouse droppings behind the buckets, containers, bags on most shelves and the floor areas.

Open bulk food bags not in rodent proof containers

Westside Pest Control report from July 8, 2021 shows high rodent activity indicating rodents caught in almost every control trap
Corrective Action(s): Operator is to close the premise immediately and address these issues:

Discard the open bulk food bags
Place all lightly packaged foods in dry storage (paper, soft plastic) in rodent proof containers.
Clean and disinfect all shelving and floor areas of the dry storage area

Have your Pest Control conduct another inspection -submit the pest control report for review
