Observation (CORRECTED DURING INSPECTION): One pot of pesto mayo sauce was found cooling in the back prep cooler. Condensation was seen of the inside of the saran wrap covering it. It was measured at 7C internally. Operator stated it was made the day before, which was also written on the label on the saran wrap.
Corrective Action(s): Discarded the sauce as it had been temperature abused. Ensure foods are cooled in shallow containers from 60C to 20C in 2 hours and from 20C to 4C in 4 hours.

Observation (CORRECTED DURING INSPECTION): 1) Sanitizer bucket had QUAT solution at 100ppm.
corrective Action(s): Re-made sanitizer solution in bucket. Ensure QUATS is at 200 ppm to properly disinfect food contact surfaces.
2) One employee was seen sanitizing trays and drying them in stacks.
Corrective Action(s): Ensure trays are separated when being sanitized and dried to ensure thorough disinfection This was corrected on the spot.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: One of the stand up freezers had no working thermometer inside and the gauge on the outside is broken. Operator has contacted maintenance to fix this.
Corrective Action(s): Ensure thermometer is available for all cold-holding units to monitor temperature.

Comments:
-Walk in cooler: 3C.
-All prep coolers: 3-4C. Top inserts: -0.3C.
-All freezers are adequate with foods stored inside frozen solid.
-All hot-holding units (pizza, chicken, hot dog) are at 60C or higher.
-Hot dogs are cooked in hot holder to 74C internally, which was monitored with probe thermometer.
-Temperature logs were available and kept daily.
-Time track system using timers was in place for pizza and chicken hot-holding. Food destruction log being kept.
-Handwash stations were supplied with hot & cold running water, liquid handsoap, and single-use paper towels.
-3-compartment sink available with proper wash, rinse and sanitize setup.
-Sanitizer dispenser had 200ppm QUATS.
-Can opener was in sanitary condition.
-Vent hood was clean.
-All foods were stored off the floor, in food grade containers or in orginal packaging.
-No raw products were found on-site.
-fly traps were available. No signs of pests observed.
-Pest control records were available.
-Food Safe Level 1 certificates available for staff.
-Permit posted conspicuously.
