Observation (CORRECTED DURING INSPECTION): 1) The ice machine had significant mould buildup inside.
2) The bleach sanitizer solution measured at over 200 ppm.
Corrective Action(s): 1) The ice machine was cleaned during the inspection. Ensure that the ice machine is cleaned on a regular basis from now on.
2) The sanitizer solution was refilled with 1 tsp per liter bleach.

Observation: a) The dishwasher had 10 ppm chlorine at the plate level. 50-100 ppm chlorine is the required range to sanitize dishes.
b) The dishwasher was leaking from the waste water line.
Corrective Action(s): a) The chlorine bucket was replaced during the inspection and 50 ppm chlorine was measured. Check daily.
b) Fix within two weeks.

Comments

All coolers were < 4 C.
All freezers were < -18 C.
The glasswasher had 12.5 ppm Iodine.
Hand sinks supplied with hot and cold water, soap and paper towels.
No evidence of pests. Pest control reports reviewed during the inspection.
General sanitation was satisfactory.
