Observation (CORRECTED DURING INSPECTION): Sandwich cooler top: meats and cheeses surface and internal temperatures are around 8.0C even with the lids on.
Bottom is <4C.
Cheeses appear to have some dried edges and appear temperature abused.
Cheeses are stacked high, above the container level.
Lettuce appears wiltering.
Corrective Action(s): Operator agreed to use up within 1hr. Thank you.
Store limited quantities inside, change up with new containers often, every 2hrs is recommended.
Check temperature and record beginning of shift to ensure cooler is keeping 4C overnight and working properly (rule out that it is from opening and closing or if it is the cooler that is the problem).

Observation: 1. One hand sink at the front is not working. Operator has called the plumber.
2. One of two ovens not working.
3. Seal on back cooler (milk) is broken, small gap at top leaking cool air. Items in this cooler <4C.
Corrective Action(s): Please ensure that you encourage staff to wash hands as much as possible.
Use soap from non-working hand sink and temporarily wash at other sink at the front or use the sink at the back.
This is especially important for making sandwiches and other ready to eat items.
Fix seal on fridge.

Hand wash sink supplied with hot and cold running water and paper towels.
Soap is located at other hand wash sink that is broken.
Operator said employees use 3rd hand sink that is at back.
Hand washing by employees was observed at this sink at the back prior to donning on gloves, thank you.
Hot holding items >60C.
Walk in cooler <4C.
Line cooler bottom <4C.
Prep tables and cutting boards are generally clean.
Stir wand sanitizer for coffees: supplied with sanitizer 200ppm Quat and ice water with visible ice.
Dishwashing is 3 comp sink method, sanitizer 200ppm Quat.
No signs of pests at the time of inspection.
Dry storage area is organized.
Staff are maintaining the floors and mopping up spills, thank you.
Mechanical room that is shared with Coop - this room needs a sweep to prevent pests. Lots of crumbs here, debris and food stained containers and 4 rodent traps. Operator said this area is Coop responsibility.
