Observation (CORRECTED DURING INSPECTION):
Observation #1: The dishwasher cannot reach 71C as required for sanitizing dishes. Tried multiple times with min/max probe thermometer. Manifold dial is displaying an incorrect temperature. The operator called a repair technician during the inspection. Corrected during inspection: Operator may use dishwasher only for washing with soap, then all dishes must be sanitized by soaking in 100 ppm bleach for 2 minutes, then air dried. To mix 100 ppm bleach: 1/2 teaspoon bleach in 1 L of water
Observation #2: Dirty cloths observed lying on food contact surfaces. Cloths must soak in sanitizer when they are not being used. 100 ppm bleach = 1/2 teaspoon bleach in 1 L of water. Showed the operator how to mix this up during the inspection and placed all cloths in the solution. Cloths must be routinely washed in the laundry machine on high heat with bleach.

Observation: The dishwasher cannot reach 71C at the plate level. The dial on the machine shows an incorrect temperature.
**Correct by: Tuesday, February 19, 2019**
Corrective Action(s): Repair the dishwasher (heating). Operator must obtain a dishwasher-safe thermometer to check the temperature of the dishwasher daily.

Observation: Operators do not hold valid FoodSafe certificates. As indicated on the last routine inspection report, all FoodSafe certificates that DO NOT have expiration dates have now officially expired.
