Observation (CORRECTED DURING INSPECTION): Guacamole and sour cream held in two inserts at start of prep line were at between 7C-9C. Staff stated these items are returned to cooler every 3 hours.
Corrective Action(s): Keep only small portions in these inserts to ensure they are used up every 2 hours. After 2 hours, do not return items to cooler - they must be discarded. *Create a time log sheet to record when guacamole and sour cream inserts must be used by.

Observation: Paper towel dispenser for hand washing station at the back was not in use; staff stated the dispenser no longer works.
Corrective Action(s): Repair or replace dispenser. A proper paper towel dispenser must be in use at each hand washing station.

Comments

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available at 200 ppm from dispensing unit and in bucket for storing wiping cloth
- Prep cooler and walk-in cooler were measured to be below 4C
- Undercounter freezer measured to be below -18C
- All hot held items were measured to be above 60C
- General sanitation very good
- All food stored off the floor and covered
- Temperature records for coolers/freezers/hot holding units well maintained - **Ensure to start time log for sour cream and guacamole insert as stated in violation code 205 above.
