Observation: Raw chicken skewers, ribs and shrimps stored in undercounter cooler under flat grill were stored at 7-8C. Operator informed that the cooler was being defrosted and there was water dripping from the unit. Technician was informed to be servicing today and had informed that the unit was adjusted for defrosting.
Corrective Action(s): Cold potentially hazardous food should be 4C or colder, if the temperature does not decrease to 4C in an hour, transfer to the walk-in cooler.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Metal inserts used to store ingredients in undercounter cooler beneath flat grill were observed to have food build up. Staff emphasizes that they clean the metal inserts at least once every 2 days.
Corrective Action(s): Food containers used during service should be cleaned and sanitized every day.

Observation: Not all food items were covered in the refrigeration units as time of inspection was between meal service. Peeled onions stored in the cooler without container.
Corrective Action(s): Cover all food when not in use. Use food grade container to store food to keep food from contamination.

Observation: Mice droppings noted under dishpit by grease trap, around dough mixer, behind wine cabinet and single chair in the dining room.
Corrective Action(s): Please remove mice droppings, clean and sanitize the floors with 100ppm bleach.

Observation: Hole identified under bar (beneath counter storing glasses) which connects directly to the kitchen.
Corrective Action(s): Please close the hole. Confirm with pest control company the hole identified on the report, so it can be properly sealed.

Observation: Grease build up noted in the exhaust hood, behind deep fryer. Food debris noted on the floor and in cupboards.
Corrective Action(s): Deep cleaning of all surfaces need to be completed by follow up inspection. Remove all food debris and grease build up to deter pest harbourage. Pull out all equipment and food to properly clean and sanitze the surfaces.
